Celia's Broccoli with Pancetta & Balsamic Glaze Directions

    1. Cook pancetta in 12-inch skillet over medium heat until crispy. Remove from skillet; set aside.
    2. Melt butter in same skillet with pancetta drippings until sizzling; add shallots and garlic. Cook until softened.
    3. Add broccoli and white wine. Cover; cook 5-8 minutes or until broccoli is crisply tender.
    4. Add sugar and balsamic vinegar; bring to a boil. Cook 3-5 minutes or until mixture is thickened.
    5. Add salt and pepper to taste
    6. Garnish with crispy pancetta.
    7. Serve immediately.
