Herbed Butter and Pesto Balsamic Cod Fish

Celia's Traditional white balsamic vinegar

Ingredients

4 fresh cod filets
2 tbsp. Celia's Parmesan Pesto dipping oil
3/4 c. Celia's Traditional white balsamic vinegar
1/2 c. mixed herbs (thyme, basil, chives, parsley, tarragon, etc.)
1/4 c. butter
salt and freshly ground pepper to taste

Herbed Butter and Pesto Balsamic Cod Fish Directions

    In a large saute pan, heat dipping oil over medium heat.  
    Generously salt and pepper cod filets and place in pan.  
    Cook on each side about 5-7 minutes depending on thickness.  The cod will be done when the filet JUST starts to pull apart.
    Remove and cover to keep warm.
    Increase the heat to medium and add the vinegar, butter, whisking constantly. Add the herbs and salt and pepper to taste. 
    Serve over the fish.
