Mushroom Herbed Chicken Directions
- Pound the chicken to 1/2-inch thickness. In a shallow dish, combine the flour, salt, and pepper. Lightly coat the chicken with the flour mixture.
- In a large skillet, heat the vinaigrette and butter over medium-high heat; add the chicken and cook for 3 to 4 minutes on each side, or until tender and no pink remains. Remove the chicken; keep warm.
- In the same skillet, add the remaining ingredients and cook for 3 to 4 minutes; pour over the chicken and serve.
