Tuscan Taters Directions
- 1. Preheat oven to 425 degrees.
- 2. Scrub potatoes (do not peel them). Slice into even sized cubes about 1”
- 3. If time allows, soak potatoes in cold water for 1 hour. (This removes starch and
- makes for a fluffier potato). Drain and dry potatoes.
- 4. Toss potatoes in bowl with oil. (add more oil if needed)
- 5. Place on a baking sheet lined with parchment paper
- 6. Bake for 30 to 35 minutes until browned and tender
- 7. Serve with sour cream, fresh chopped green onions and bacon if desired.
