Tuscan Pork Chops Directions

    1. Heat 3 TBS EVOO in a large saute pan. Add potatoes and saute, stirring occasionally for about 8 minutes.
    2. Push potatoes to outside edge of pan. Add 3 TBS EVOO to middle of pan. Add pork chops and saute approximately 6 minutes (until browned). Turn pork chops over, stir potatoes and add asparagus between chicken breasts and potatoes. Cover with a tight fitting lid and cook approximately 8 minutes until pork has browned and has cooked through.
    3. Serve on plate and drizzle pan drippings over pork chops.
    4. OPTION: Drizzle with Celia's Traditional Balsamic
